Ingredients

  • Ingredients A
  • 125 g butter, left at room temperature

  • 50 g soft brown sugar

  • Ingredients B
  • 1 egg, lightly beaten

  • 1/2 tsp vanilla essence

  • 1/2 tsp orange oil

  • **Ingredients C
  • 150 g all purpose flour

  • 50 g icing sugar

  • 20 g corn flour

  • 1/2 teaspoon salt

  • Ingredients D
  • 80 g dried cranberries

  • 80 g cornflakes

Directions

  • Using a paddle attachment, cream ingredients A till fluffy.
  • Add in ingredients B and mix well.
  • Change to a hook attachment and add in ingredients C and mix till well combined.
  • Fold in ingredients D.
  • Leave to cool in fridge for about 15 min.
  • Spoon out ½ tsb balls and place on lined baking sheet.
  • Bake in a preheated oven at 150C for 25-30 mins or till golden brown.
