A flavourful, hearty Moroccan Couscous dish that’s packed with roasted vegetables!
Ingredients
Ingredients A
A handful of cherry tomatoes
Eggplant, cut into cubes
1bell pepper, cut into cubes
1red onion, cut into cubes
4clovesgarlic, chopped
2Tbspolive oil
Salt and pepper to taste
1tbspcoriander powder
1tspcumin powder
2cupscouscous
3cupsvegetable broth
Coriander, chopped
Mint, chopped
1lemon, jus and zest
Directions
Toss all ingredients A together and bake in a preheated oven at 200C for 35-40 mins or until cooked tender.
In a glass bowl, place couscous and boiling vegetable broth. Close with another plate or cover with a cling film. Leave to stand for 10 mins. Fluff with fork.
Stir in roasted vegetables, coriander, mint, lemon jus and zest. Season to taste.
