A flavourful, hearty Moroccan Couscous dish that’s packed with roasted vegetables!

Ingredients

  • Ingredients A

  • A handful of cherry tomatoes

  • Eggplant, cut into cubes

  • 1 bell pepper, cut into cubes

  • 1 red onion, cut into cubes

  • 4 cloves garlic, chopped

  • 2 Tbsp olive oil

  • Salt and pepper to taste

  • 1 tbsp coriander powder

  • 1 tsp cumin powder

  • 2 cups couscous

  • 3 cups vegetable broth

  • Coriander, chopped

  • Mint, chopped

  • 1 lemon, jus and zest

Directions

  • Toss all ingredients A together and bake in a preheated oven at 200C for 35-40 mins or until cooked tender.
  • In a glass bowl, place couscous and boiling vegetable broth. Close with another plate or cover with a cling film. Leave to stand for 10 mins. Fluff with fork.
  • Stir in roasted vegetables, coriander, mint, lemon jus and zest. Season to taste.
