Ingredients

  • 2 cups fresh coriander leaves, coarsely chopped

  • 2 garlic cloves, coarsely chopped

  • 1/4 cup (45g) toasted groundnuts

  • 1/2 cup (125ml) light vegetable oil

  • 1 tbsp tamarind juice

  • 1 tsp gula melaka, diluted with 2 tbsp hot water

  • Salt to taste

  • Pasta, blanched

  • 1/4 water from boiling pasta

  • Red chillies and roasted groundnuts, for garnishing

Directions

  • Place all pesto ingredients into a food processor and blitz till smooth.
  • Toss with hot blanched pasta and ¼ cup of pasta water.
  • Top with red chillies and roasted groundnuts.
