Coriander Pesto Pasta 0 from 0 votes Course: MainCuisine: WesternDifficulty: Easy Servings2servingsPrep time10minutesCooking time25minutes Ingredients 2 cups fresh coriander leaves, coarsely chopped2 garlic cloves, coarsely chopped1/4 cup (45g) toasted groundnuts1/2 cup (125ml) light vegetable oil1 tbsp tamarind juice1 tsp gula melaka, diluted with 2 tbsp hot water Salt to taste Pasta, blanched1/4 water from boiling pasta Red chillies and roasted groundnuts, for garnishing Directions Place all pesto ingredients into a food processor and blitz till smooth.Toss with hot blanched pasta and ¼ cup of pasta water.Top with red chillies and roasted groundnuts.
