Ingredients

  • 150 g russet potatoes, peeled

  • Ingredients A
  • 3/4 cup rice flour

  • 1/4 cup glutinous rice flour

  • 89 ml water (or just enough)

  • Sauce
  • 1/4 cup vegetable oil

  • 1 tomato, cut into small dices

  • 1 green onions cut into cubes

  • Ingredients B
  • 2 tbsp garlic, minced

  • 2 bird’s eye chillies, sliced

  • 2 green onions. Sliced

  • Ingredients C
  • 1/2 tsp vegetable stock powder

  • 3 tbsp soy sauce

  • 1 tbsp vegetarian oyster sauce

  • 1 tbsp fermented chinese tofu

  • 1 tbsp sugar

  • 1/2 tsp salt

Directions

  • Peel and slice potatoes. Steam till tender. While still a little warm, add in the rice and glutinuos rice flours bit by bit till you get a dough. If it becomes too dry add some water (only if needed).Shape into 3g balls and flatten. Make an indent in the centre of the the flattened ball.
  • Cook in boiling water till the dumplings float. Put immediately into cold water and then drain.
  • In a wok heat some oil and sauté ingredients B till fragrant. Add tomatoes and green chillies and cook till tomatoes are tender.
  • Add in ingredients C and cook until thickened. Toss with potato dumplings.
