Ingredients

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1 tbsp freshly grated ginger

  • 400 g shiitake mushrooms

  • 200 g arrowroot, peeled and quartered

  • Seasonings

  • 3 tbsp oyster sauce (vegetarian)

  • 2 tbsp low-sodium soy sauce

  • 2 tbsp rice vinegar

  • 1 tsp sesame oil

  • Salt and pepper, to taste

  • Large leafy lettuce (leaves separated), for serving

  • Cooked white rice, for serving

Directions

  • In a wok, saute in some oil, onion, garlic and ginger until fragrant.
  • Add in mushrooms and arrowroot. Add seasonings and a little water. Leave to braise till the arrowroot is tender. Season with salt and pepper to taste.
  • Serve with lettuce and rice.
