  • 250 g pumpkin, shredded

  • 100 g meat, diced, seasoned with salt and pepper (optional)

  • 50 g dried shrimp, blended coarsely (optional)

  • 3 shiitake mushrooms, chopped coarsely

  • 75 g preserved turnip, tai tau choy, chopped coarsely

  • 1 tbsp garlic, minced

  • 1 tbsp shallot, minced

  • 2 tbsp vegetable oil

  • Batter
  • 250 g rice flour, sifted

  • 38 g Tapioca flour, sifted

  • 500 ml water

  • Seasoning
  • 2 tsp salt

  • 1 tsp sugar

  • 1/2 tsp vegetable stock granules

  • 1/2 tsp ground white pepper

  • Garnishing
  • Fried shallots, spring onion and red chillies


  • Heat oil in a wok and sauté onions and garlic till fragrant. Add in meat and cook through. Add in pumpkin, dried shrimp, turnip and toss well.
  • Add in seasoning and batter mixture and cook till the mixture thickens.
  • Pour into a heat proof bowl and steam for 40 mins. Top off with garnishings.
