Ingredients

  • 1 pumpkin ( steamed to get 400g pumpkin puree)

  • 1 egg

  • 5 g yeast

  • 20 g white sugar

  • 10 g gula melaka

  • 400 g all purpose flour + 1 tsp salt

  • 200 ml warm water

  • Chinese red dates, pitted and sliced

  • Vegetable oil and sesame seeds

Directions

  • Remove skin and seeds of the pumpkin and steam. Mash to get 400g of puree.
  • Once puree is cooled. Mix with egg yeast and gula melaka.
  • Add in flour and water and mix till you get a thick paste. Leave to rise for 45 mins.
  • Grease a 9 inch round cake pan and sprinkle with sesame seeds. Pour the deflated bread mixture into the pan and spread a thin layer of oil on the surface. Lleave to rise till its double its original size, around 30 mins.
  • Arrange sliced dates and sprinkle some sesame seeds on the surface of the cake and place in a steamer. Cover and bring water to a boil and steam for 30 mins. Turn off the heat and leave for another 5 mins.
