Ingredients

  • Ingredient A
  • 4 eggs

  • 40 ml water + ½ tbsp cornstarch

  • 160 ml water

  • 1 pinch salt

  • Sauce
  • 2 cloves garlic chopped

  • 1 tsp chilli flakes

  • 3 tbsp hot oil

  • 3 tsp light soy sauce

  • 1 tsp black vinegar

  • 1 tsp caster sugar

Directions

  • Blanch spinach and chop roughly.
  • Mix all ingredients A till smooth. Fold in spinach and pour into a heat proof bowl.
  • Steam for 20mins.
  • For the sauce, pour hot oil over chilli flakes and garlic. Mix with soy sauce, black vinegar and sugar. Pour over steamed eggs.
