Happy Dragonboat festival! We usually celebrate it with dumplings made by my grand aunts… but they are no longer around… so i had to learn how to make em.. traditions shall not perish!! These dumplings are mostly made from plants.. and a small portion of meat.. just the way Parent Earth likes it too 😉

Ingredients

  • 325 g glutinous rice

  • 2 tbsp vegetable oil

  • 1/4 cup diced shallot

  • 1 tbsp diced garlic

  • 1 tbsp soy sauce

  • 2 tsp dark soy sauce

  • 10 -20 pieces of bamboo leaves

  • To marinate chicken
  • 200 g chicken thighs cut into large cubes

  • 1/2 tbsp soy sauce

  • 1/2 tbsp dark soy sauce

  • 1 tsp oyster sauce

  • 1/2 tsp sesame oil

  • 1/2 tsp salt

  • 1 tsp five-spice powder

Directions

  • Soak bamboo leaves in hot water for 1 hour.
  • Marinate chicken with all the marination ingredients listed.
  • In a wok sauté shallots and garlic until fragrant. Add in shitake, glutinous rice and soy sauces.
  • Using two bamboo leaves to shape into a cone as shown per video. Fill with rice, chicken pieces and then rice mixture again.
  • Wrap and tie.
  • Put dumplings in a pot and fill with water. Bring to a boil and let simmer for 2.5 hours. (Or cook in pressure cooker for 1-1.5 hour.)
