Ingredients

  • ChickPea Biryani
  • 2 cups white basmati rice

  • 2 tablespoons olive oil

  • 1 large onion, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 1 cup diced carrot

  • 4 garlic cloves, rough chopped

  • 2 teaspoons fresh ginger, grated

  • Spices
  • 1 tablespoon cumin

  • 1 tablespoon coriander

  • 1 teaspoon chili powder

  • 1 cinnamon stick

  • 2 bay leaves

  • 1 star anise pod

  • 2 cardamom pods

  • 1/2 teaspoon ground turmeric

  • 4 cups veggie stock

  • 3/4 teaspoon salt, more to taste

  • 1 can chickpeas, drained, rinsed

  • 1/2 cup raisins

  • Garnish
  • 1/4 cup cashews

  • Chopped parsley or cilantro

Directions

  • In an oven safe pot, heat oil and sauter spices till fragrant.
  • Add in onions, ginger and garlic. Sauter till onions are soft. Add in all other ingredients and bring to a boil.
  • Cover and bake in a preheated oven at 180C for 18 mins.
  • Garnish with cashews and cilantro.
