ChickPea Biryani 0 from 0 votes Course: MainCuisine: AsianDifficulty: Easy Servings4servingsPrep time10minutesCooking time15minutes Ingredients ChickPea Biryani2 cups white basmati rice2 tablespoons olive oil1 large onion, thinly sliced1 red bell pepper, thinly sliced1 cup diced carrot4 garlic cloves, rough chopped2 teaspoons fresh ginger, gratedSpices1 tablespoon cumin1 tablespoon coriander1 teaspoon chili powder1 cinnamon stick2 bay leaves1 star anise pod2 cardamom pods1/2 teaspoon ground turmeric4 cups veggie stock3/4 teaspoon salt, more to taste1 can chickpeas, drained, rinsed1/2 cup raisinsGarnish1/4 cup cashews Chopped parsley or cilantro Directions In an oven safe pot, heat oil and sauter spices till fragrant.Add in onions, ginger and garlic. Sauter till onions are soft. Add in all other ingredients and bring to a boil.Cover and bake in a preheated oven at 180C for 18 mins.Garnish with cashews and cilantro.
