Ingredients

  • King Trumpet Mushrooms

  • Turmeric powder and salt

  • 1 stalk curry leaf

  • 1 piece dried tamarind slice

  • 1 yellow onion, sliced

  • 2 tbsp vegetarian oyster sauce

  • Gula melaka and salt, to taste

  • Spice paste (Blended)
  • 1 onion

  • 1 inch ginger

  • 5 shallots

  • 3 cloves garlic

  • 1 lemongrass

  • 8 dried chillies, boiled

Directions

  • Toss mushrooms with oil, turmeric powder, salt and pepper. Cook in air fryer at 180C for 15 mins.
  • In a wok, sauter the spice paste till the chilli oil separates.
  • Add in curry leaves, tamarind slice, and oyster sauce. Season with salt and gula melaka to taste.
  • Add in the yellow onion and cook till onion is soft enough. Stir in cooked mushrooms.
