Ingredients

  • Ingredient A (sliced)
  • 1 clove garlic

  • 2 small red onions

  • 1/2 inch ginger

  • 5 dates, pitted

  • Ingredient B
  • 2 star anise

  • 2 cardamom

  • 3 cloves

  • 1 lemongrass

  • Other
  • 1 tbsp cooking oil

  • 2 tbsp mixed vegetables

  • 1 cup vegetable stock

  • 1 cup water

  • 50 g rice

  • 50 ml coconut milk

  • Fried shallots and coriander, to serve

Directions

  • Sauté ingredients B till fragrant. Add in ingredients A and sauté till onions are soft.
  • Add in all other ingredients except coconut milk and simmer till congee becomes thick.
