Ingredients A
225gminced chicken
1medium-sized dried shiitake mushrooms, soak
1smallonion
1/2tspminced ginger
1tspminced garlic
1/2carrot, roughly chopped
Ingredients B
1/2tbsplight soy sauce
1/2tbspoyster sauce
1/2tspsalt
1tspcaster sugar
1/2tspground white pepper
Ingredients C
1mediumsized bitter gourd
1tspsalt
Ingredients D
1tbspblack bean paste (optional)
1/2cupchicken stock
1tbspcornstarch + 2 tbsp water
1tbspoyster sauce
1tspsoy sauce
1tspsesame oil
Directions
Slice bitter gourd and remove seeds. Toss with salt and leave to stand for 15 mins. Pour away excess water and pat dry.
Place ingredients A into a chopper and blitz till smooth. Add in ingredients B and blitz till combined well.
Stuff minced meat mixture into the centre of the bitter gourd and place on a heat proof dish. Steam for 15 mins.
For the sauce, heat all ingredients D together in a small saucepan till it thickens. Pour over steamed bitter gourd.
