Ingredients

  • Ingredients A
  • 250 g tofu

  • 1 small onion

  • 1/2 tsp minced ginger

  • 1 tsp minced garlic

  • 1/2 carrot, roughly chopped

  • Ingredients B
  • 1/2 tbsp light soy sauce

  • 1/2 tbsp oyster sauce

  • 1/2 tsp salt

  • 1 tsp caster sugar

  • 1/2 tsp ground white pepper

  • Ingredients C
  • 1 medium sized bitter gourd

  • 1 tsp salt

  • Ingredients D (finely blended)
  • 5 small red onions

  • 1 big red onion

  • 3 cloves garlic

  • 3 tbsp chilli paste

  • Other
  • ½ cup coconut milk

Directions

  • Slice bitter gourd and remove seeds. Toss with salt and leave to stand for 15 mins. Pour away excess water and pat dry.
  • Place ingredients A and B into a chopper and blitz till will combined.
  • Stuff minced tofu mixture into the centre of the bitter gourd and place on a heat proof dish. Steam for 15 mins.
  • For the sauce, sauter ingredients D with enough oil till the chilli oil separates. Add in coconut milk and season with salt and sugar to taste. Pour over steamed bitter gourd.
