Ingredients

  • 1 Bitter Gourd

  • 2 sweet potatoes, boiled and mashed

  • Gula melaka sauce
  • 4 tbsp gula melaka

  • 2 tbsp cornstarch+ 2 tbsp water

  • 1 cup water

  • 1 inch ginger, sliced

  • 1 pinch salt

Directions

  • Cut both tips of the bitter gourd off and cut horizontally into two. Push the seeds (and white part) out using chopsticks.
  • Boil bitter gourd in hot water (with 2 tbsp of sugar + 1 tsp vinegar) until tender.
  • Stuff with mashed sweet potatoes and slice horizontally. (Approx. 1 inch thick)
  • For the sauce, heat gula melaka, water and ginger till the gula melaka is dissolved. Add in other ingredients and cook till thickens
