Ingredients
2Bitter Gourds
Ingredients A
1cupglutinous rice, washed
1/2cupcoconut milk
1/2cupwater
1/4cupsugar
1screwpine leaf
1tspturmeric powder
Gula melaka sauce
4tbspgula melaka
2tablespoonscornstarch+ 2 tbsp water
1cupwater
1inch ginger, sliced
1pinchsalt
Directions
Cut bitter gourd and remove seeds. Toss with salt and leave to stand for 15 mins. Pour away excess water and pat dry. Blanch in boiling water
Mix ingredients A together and leave to marinate for 15 mins.
In a pan sauté Ingredients B with some oil till fragrant. Add in Ingredients A and sauté till mushrooms are soft. Mix sauteed mixture with glutinous rice.
Stuff glutinous rice mixture into the centre of the bitter gourd and place on a heat proof dish. Steam for 5 mins.
For the sauce, heat ingredients C together till thickened. Pour over steamed bitter gourd.
