Ingredients

  • 2 Bitter Gourds

  • Ingredients A
  • 1 cup glutinous rice, washed

  • 1/2 cup coconut milk

  • 1/2 cup water

  • 1/4 cup sugar

  • 1 screwpine leaf

  • 1 tsp turmeric powder

  • Gula melaka sauce
  • 4 tbsp gula melaka

  • 2 tablespoons cornstarch+ 2 tbsp water

  • 1 cup water

  • 1 inch ginger, sliced

  • 1 pinch salt

Directions

  • Cut bitter gourd and remove seeds. Toss with salt and leave to stand for 15 mins. Pour away excess water and pat dry. Blanch in boiling water
  • Mix ingredients A together and leave to marinate for 15 mins.
  • In a pan sauté Ingredients B with some oil till fragrant. Add in Ingredients A and sauté till mushrooms are soft. Mix sauteed mixture with glutinous rice.
  • Stuff glutinous rice mixture into the centre of the bitter gourd and place on a heat proof dish. Steam for 5 mins.
  • For the sauce, heat ingredients C together till thickened. Pour over steamed bitter gourd.
