Ingredients

  • 4 bitter gourds

  • 1 cup glutinous rice, cooked

  • Ingredients A
  • 4 shiitake mushrooms, soaked overnight

  • 1 tsp light soy sauce

  • 1 tsp dark soy sauce

  • 1/4 tsp Salt

  • A pinch of five spice powder

  • 1 tsp sesame oil

  • Ingredients B
  • 1 clove garlic chopped

  • A green onion, chopped

  • a small piece of Ginger, chopped

  • Ingredients C
  • 1 cup vegetable stock

  • 1 tbsp cornstarch + 2 tbsp water

  • 1 carrot, chopped

  • 1 scallion, chopped

Directions

  • Cut bitter gourd and remove seeds. Toss with salt and leave to stand for 15 mins. Pour away excess water and pat dry. Blanch in boiling water
  • Mix ingredients A together and leave to marinate for 15 mins.
  • In a pan sauter Ingredients B with some oil till fragrant. Add in Ingredients A and sauter till mushrooms are soft. Mix sauteed mixture with glutinous rice.
  • Stuff glutinuous rice mixture into the centre of the bitter gourd and place on a heat proof dish. Steam for 5 mins.
  • For the sauce, heat ingredients C together till thickened. Pour over steamed bitter gourd.
