Bitter Gourd Stuffed with Glutinous Rice (Savoury)

Ingredients
4bitter gourds
1cupglutinous rice, cooked
Ingredients A
4shiitake mushrooms, soaked overnight
1tsplight soy sauce
1tspdark soy sauce
1/4tspSalt
A pinch of five spice powder
1tspsesame oil
Ingredients B
1clovegarlic chopped
A green onion, chopped
a small piece of Ginger, chopped
Ingredients C
1cupvegetable stock
1tbspcornstarch + 2 tbsp water
1carrot, chopped
1scallion, chopped
Directions
Cut bitter gourd and remove seeds. Toss with salt and leave to stand for 15 mins. Pour away excess water and pat dry. Blanch in boiling water
Mix ingredients A together and leave to marinate for 15 mins.
In a pan sauter Ingredients B with some oil till fragrant. Add in Ingredients A and sauter till mushrooms are soft. Mix sauteed mixture with glutinous rice.
Stuff glutinuous rice mixture into the centre of the bitter gourd and place on a heat proof dish. Steam for 5 mins.
For the sauce, heat ingredients C together till thickened. Pour over steamed bitter gourd.
