Ingredients

  • 1 lbs (approx. 500g) of potatoes, cut into large cubes

  • 3 green chillies, sliced

  • 1 banana, sliced

  • Skin of 1 banana, cleaned

  • 1 1/2 cups tomatoes

  • 1 large onion, diced

  • 3-4 cloves of garlic, minced

  • 1 inch ginger, sliced thinly

  • 2 1/2 tbsp curry powder

  • 2 tsp cumin

  • 2 tsp chili powder

  • 2-3 bay leaves

  • 1 cinnamon stick

  • 1/2 cup vegetable stock

  • Salt and pepper, to taste

  • Coriander leaves

  • Cooking oil

Directions

  • In a bowl, coat potato cubes with oil and curry powder. Airfry at 180°C for 25 mins or till golden brown or fry in hot oil.
  • Heat oil in a pan, add in cinnamon stick, cumin, bay leaves and chilli powder. Add in onion, ginger, and garlic. Sauté for another 2-3 mins.
  • Add in green chillies, tomatoes, and vegetable stock. Add in banana peels, bring to a boil and leave to simmer for about 15mins. Season to taste. Stir in potatoes and banana, simmer till cooked.
  • Garnish with coriander leaves and serve with coconut rice.
