A healthy snack for any time of the day!

Ingredients

  • 2 Eggplant

  • 2 cloves garlic, chopped

  • 2 tablespoons lemon juice and grated lemon peel

  • 1 tablespoon peanut butter

  • cup olive oil

  • 2 stalks of coriander leaves

  • A pinch of salt

  • teaspoon cumin powder

Directions

  • Slice the eggplant and add a pinch of salt, black pepper, and olive oil. Sprinkle garlic and bake at 180C for 30mins or until fully cooked.
  • Take only the eggplant filling and grind it together with all the other ingredients (except chili oil)
  • Pour chili oil.
