  • Filling
  • 2 cup shredded coconut

  • 50 g gula melaka

  • 40 g caster sugar

  • 1 pinch salt

  • 2 screwpine leaves

  • 1/4 cup water

  • Ingredient A
  • 2 tbsp bread flour

  • 2 tbsp water

  • 4 tbsp milk

  • Ingredient B
  • 70 grams sugar

  • 120 ml milk

  • 1 tbsp yeast

  • Ingredient C
  • 320 grams bread flour

  • 1 tsp salt

  • Other
  • 1 egg

  • 3 tbsp butter

  • Egg wash

  • Sesame seeds


  • For filling, heat water, screwpine leaves, sugar and gula melaka together til sugar is dissolved. Leave to sit for 15 mins. Strain and heat in a wok till sugar starts to bubble. Add in shredded coconut and salt. Cook till it starts to dry out. Leave to cool
  • Heat ingredients A till thickened. Set aside.
  • Mix ingredients B together and set aside.
  • Sift ingredients C together. Add in ingredients B and egg. Mix well. Add ingredients A which has been cooled down. Mix well.
  • Once you get a soft dough, continue kneading adding 1 tbsp of butter at a time. Leave to rise for 45 mins with a damp cloth.
  • Punch down and divide to 9 balls of 56g. Flatten and stuff with coconut filling. Roll into balls and place in a greased baking tray. And cover with damp cloth and leave to rise for another 30-45 mins or till double their original size.
  • Coat with a layer of egg wash and sprinkle with sesame seeds. Bake in a preheated oven at 180C for 20-25 mins or till golden brown.
