Ingredients 1 cup cooked red beans (adzuki beans) Water1/2 cup bread crumbs2 tbsp butter of choice (nut butters are great for this)2-3 stalks of curry leaves2 tsp chopped garlic1 tsp curry powder2/3 cup coconut milk2 tap brown sugar Salt and pepper to taste Directions Blend red beans with just enough water. Cook until it thickens. Chill until firm. Mix red beans with breadcrumbs and form small “meat” balls. Fry in hot oil until crispy or in an air fryer. For the sauce, melt butter and sauté curry leaves and garlic until fragrant. Add in curry powder and coconut milk. Season with sugar, salt, and pepper. Pour over “meat” balls.
