A yummy alternative to traditional meatballs, Healthy and delicious!

Ingredients

  • 1 cup cooked red beans (adzuki beans)

  • Water

  • 1/2 cup bread crumbs

  • 2 tbsp butter of choice (nut butters are great for this)

  • 2-3 stalks of curry leaves

  • 2 tsp chopped garlic

  • 1 tsp curry powder

  • 2/3 cup coconut milk

  • 2 tap brown sugar

  • Salt and pepper to taste

Directions

  • Blend red beans with just enough water. Cook until it thickens. Chill until firm.
  • Mix red beans with breadcrumbs and form small “meat” balls. Fry in hot oil until crispy or in an air fryer.
  • For the sauce, melt butter and sauté curry leaves and garlic until fragrant. Add in curry powder and coconut milk.
  • Season with sugar, salt, and pepper. Pour over “meat” balls.
